Mum Amber gave birth to her gorgeous boys 15 weeks early- 
so she has not had her original planned baby shower. 
Arien & Blaze are little miracles. 
They were 670 & 620 grams when born and they are now each over 2.5 kilos. 
Both are still in the hospital however they grow bigger and stronger every day. 
That’s why Mum Amber nicknamed them Lion & Tiger 
as these represent being big, strong.

Special Ensaymada

The Philippines also adopted the Majorcan ensaimada 
(commonly spelled ensaymada in Philippine languages). 
As a Spanish colony for over 300 years, 
the Philippine variant has evolved over the centuries and is perhaps 
one of the most common delicacies in the country. 
The localized pastry is a brioche baked with butter instead of lard 
and topped with grated cheese and sugar. 
Upscale versions of ensaymada can be topped with butter cream and sugar. 
During Christmas season, it used to be a marked tradition to top the pastry 
with a specially aged type of Edam cheese called queso de bola 
 and is eaten with hot chocolate and strawberries.









Filipino breads, cakes, pastries and desserts are always hard to find here in Australia or maybe I have set myself a very high standard when it comes to food and not a lot of them had made it quite to that level of high quality good food yet.

I have started to create a
"Filipino Bread, Cakes, Pastries and other Desserts"
where you will start to see photos of all these delicious cakes, breads and desserts that we Filipinos in Australia have been craving for. Let's end this wishful thinking and turn this into a reality, shall we?

In a couple of months you will see this album get bigger and bigger with all these yummy foodies that I will start to bake and soon will be open for everyone to order.

In the meantime, let me know what you are craving for, and I will give it a shot and bake it for you!

Banana Chocolate Chip Cupcakes

Banana Chocolate Chip Cupcakes



Yields 12 standard size cupcakes

Ingredients:

WET
1/2  cup of Vegetable Oil
2     large eggs

1/2  cup of Caster Sugar
3     mashed bananas

1/4  tsp of vanilla extract



DRY
1 2/3 Cup of all purpose flour
1     tsp baking powder

1/2  tsp of baking soda
pinch of salt
1/4 tsp of ground cinnamon



A
1    cup of dark chocolate chips

1    cup of white chocolate chips
1/4 cup of cinnamon chips
1    tbsp of plain flour

Directions: 
  • Preheat your oven to 180 degrees C. 
  • Line a 12 piece cupcake tin with cupcake liners
  • In a large bowl combine all the WET ingredients.Mix until all combined.
  • Sift all the DRY ingredients into the WET mixture. Mix until all combined.
  • In a separate bowl add the chocolate chips and 1 tbsp of flour and mix until all the chocolate chips are coated in the flour. Set aside.
  • Fold in the chocolate chips into the mixture.
  • Using a large ice cream scoop divide the batter into your cupcake pan and bake for 18-20 minutes.

TOP TIP:  
While the cupcakes are hot, top each with a chocolate button of your choice (dark, milk or white). The main purpose of this is to melt on the top when cupcakes are reheated. When reheating, place in the microwave for 15 seconds.
