Banana Chocolate Chip Cupcakes

Banana Chocolate Chip Cupcakes



Yields 12 standard size cupcakes

Ingredients:

WET
1/2  cup of Vegetable Oil
2     large eggs

1/2  cup of Caster Sugar
3     mashed bananas

1/4  tsp of vanilla extract



DRY
1 2/3 Cup of all purpose flour
1     tsp baking powder

1/2  tsp of baking soda
pinch of salt
1/4 tsp of ground cinnamon



A
1    cup of dark chocolate chips

1    cup of white chocolate chips
1/4 cup of cinnamon chips
1    tbsp of plain flour

Directions: 
  • Preheat your oven to 180 degrees C. 
  • Line a 12 piece cupcake tin with cupcake liners
  • In a large bowl combine all the WET ingredients.Mix until all combined.
  • Sift all the DRY ingredients into the WET mixture. Mix until all combined.
  • In a separate bowl add the chocolate chips and 1 tbsp of flour and mix until all the chocolate chips are coated in the flour. Set aside.
  • Fold in the chocolate chips into the mixture.
  • Using a large ice cream scoop divide the batter into your cupcake pan and bake for 18-20 minutes.

TOP TIP:  
While the cupcakes are hot, top each with a chocolate button of your choice (dark, milk or white). The main purpose of this is to melt on the top when cupcakes are reheated. When reheating, place in the microwave for 15 seconds.
